I've discovered that I do not like most vegan imitations of food. I'd rather just know that I'm eating avocados, beans, or satay (for protein). When it comes to replacements for dairy, I haven't found any I like except cashew ice cream. Coconut cream is good but way too fattening.
Some of the imitations are so much better in today's times than they were ten years ago, but some replacements aren't even close. We had a vegan whipped cream for Thanksgiving, and I did not like it at all. I love avocados and beans, though.

Your cookbook title made me laugh! And, yes, this vegetarian is still trying to embrace vegan cheese.
